I have a couple of tasty pumpkin recipes to share! One is healthy, and the other not so much!
Pumpkin Pie Cheesecake Oat Parfait

For the pumpkin pie cheesecake layer I blended the following ingredients in a food processor:
-3/4 cup cottage cheese
-1/2 cup canned pumpkin
-1/2 frozen banana
-1 T. pumpkin pie spice
-3 T. almond milk
For the other layer I just used cinnamon instant oatmeal, and then sprinkled a little nutmeg on the top.
It's a nice combo of hot and cold. So yummy and guilt free!
Now for the not so healthy dessert:
Pumpkin Pie BarsMartha Stewart recipe that is a must try. Trust me, you will love these even if you don't like pumpkin pie (just ask my husband).
The only thing I changed about the recipe was that I used white chocolate chips.
This will be a fall tradition from now on.
